Salmon and Spinach Curry

Meerha Sodha’s ‘Made in India’ is one of my all-time favourite cookbooks full of tasty and inspiring recipes. This is a delicious and easy recipe and the salmon provides a serving of omega 3 fats which are so vital for brain, hormone, heart, immune and skin health.

Don’t be put off by the long list of spices – this dish is actually pretty quick to prepare and ingredients such as garlic, ginger and turmeric are anti-inflammatory. Adding spinach provides iron and antioxidants. Serve with brown rice or flatbreads.
